Salmon Fishcakes Recipe by Kellie (Mini Must Have)

1 tin boneless, skinless salmon
1 zucchini, grated
1 medium sweet potato, steamed and mashed
1 small white potato, peeled and steamed
1 brown onion, diced
Half a teaspoon of grated lemon zest (approx)
1 handful of chopped coriander or dill

1 egg (beaten)
handful of breadcrumbs
Olive or vegetable oil

1. Peel and roughly chop potatoes.
2. Steam potatoes until soft. Mash and allow to cool.
3. Add onion, lemon zest, salmon, grated zucchini and herbs to mash potatoes.
Combine and season with salt and pepper.
4. Divide mixture and shape into patties. Coat patties in egg and breadcrumbs.
5. Heat a small amount of oil in a frying pan over a medium heat.
Cook salmon patties until golden brown on both sides.
6. Serve with fresh salad or my daughter’s favourite – rice!
