Here’s a Fast • Easy • Delicious recipe from Chantal of Chantal Vincent Stamps & Stationery.

Zucchini Slice

4 -5 zuchinnis, grated
1 onion, finely chopped
1 garlic clove, finely chopped (optional)
5 eggs
1 cup self raising flour
1/4 cup of olive oil
1 cup grated tasty cheese
2 teaspoons curry powder (optional/interchange your preferred herbs/spices)

Preheat oven to 180C. Mix all of the above in a large bowl until well combined . Spoon into casserole or baking dishes.  No deeper than 1″ deep of mix to allow the slice to cook through evenly in the required time. (You may wish to add extra cheese on top). Bake until set and crusty on top – approximately 40 mins. Can be baked in muffin pans for portion control and fast baking time.  Serve with chunky tomato relish and a leafy green side salad.

    5 eggs! I better get myself a chook! It looks great though :) Once those Zucchini’s start growing it is hard finding recipes to keep up with them!

    I would like to see a pic of Aspen with all the crumbs please :)
